Welcome to the first edition of our new Monthly Newsletter!

As Castle Glen's Founder, it is my personal mission to ensure Castle Glen Vineyard and Liqueurs produces the best quality products for the best possible price. Castle Glen is committed to continuing our tradition. Providing our customers with World Class products at a price you can afford.

Castle Glen Liqueurs has experienced the biggest Excise Tax increase for five years on 1st of August of almost $2.00 per litre. Are we raising the price of our Liqueurs? No. We are currently continuing to keep our prices as low as possible.

Our NEW Liqueur Fudges have been such a success, due to customer demand, the range has grown to 18 varieties in just eight weeks. Wow! Our entirely scrumptious Liqueur Fudges are made the old fashioned way with real chocolate, sugar, butter and of course our Famous Liqueurs. Have you tried our fantastic Liqueur Fudge yet?

Gourmet Beef Pies - Come and sample one of our gourmet beef pies made with rump steak, cooked in Aussie Sling, Coconut Crème Liqueur, Dragon's Relish and Five Spice - we vary this recipe each week - in front of our large fireplace with a glass of fortified wine (port).

Selling Fast! Castle Glen Vineyards 'All Natural' Red Wines. They are chemical free, pesticide free and sulphur free, with only naturally occurring sulphites. The 2008 Late Pick Cabernet Sauvignon, sweet, rich and full-bodied, is nearly sold out. Our 2008 Montepulciano, one of our 'strange' varieties, is a fruity dry red wine with soft tannins. This wine has been a huge hit with our customers this year with only small amounts of stock remaining. Another popular red, our 2006 Cabernet Sauvignon, Shiraz and Merlot, a full bodied red wine with great colour, is also in short supply. Be quick to secure a case now, they won't last long!

At the Castle Glen Vineyard we are busy pruning the dormant vines ready for spring. With the coldest winter recorded on the Granite Belt for many years we have had snow and sleet at Castle Glen Vineyard. This is great news for next year's crop. The colder the winter the better the vines will produce in the following year. This means more fantastic wine from our expected bumper crops!

Look after our new babies! We have been busy avenue planting our driveway with 57 beautiful Silver Elms. If you like to visit in Spring and Summer you will see the amazing variegated silver leaves in their full glory. These statuesque trees are well advanced. We are giving them their very best start with individual, rabbit proof fencing and tender loving care. When you visit, please take care not to run over them. Otherwise you will have to face their self appointed 'Mum' Carol-Anne. She won't be happy!

Our New Website is coming soon! With our fantastic new look site you will be able to buy all of your favourite products online. Safe and secure product purchasing, monthly specials, product information, and Cedric's Blog are just some of the features that will be available. We will keep you posted on its progress.

Cedric's Corned Beef Recipe
Ingredients:

Silverside - 1.5 - 2 kg
Garlic Cloves - whole bulb
2 cups Sweet Semillon Vinegar with Rosemary
Mustard - Wholegrain or Dijon
2 Carrots
1 Potato, peeled and cut into quarters
1 Onion, peeled whole
2 cups of water (approx)

Method:

Peel Garlic Cloves and put holes with a knife into the Silverside. Place Garlic Cloves into the holes. Rub Mustard into the surface of the Silverside. Place into large Casserole with Lid - that can go on top of your stove. Put in Water, Carrots, Potato and Onion, top with Sweet Semillon Vinegar to cover meat.

Bring to boil and then turn down heat and simmer for 45 minutes per kg.

Serve cut into thick slices with mashed and sweet potato.

Note: Remove vegetables - i.e. carrot, potato and onion from silverside. Mash and serve to any puppies like 'James', our famous 'Gourmet Pie Taster', with any left over mashed potatoes - they will think its fantastic!
Corned Beef Leftovers
Ingredients

Left Over Corned Beef - sliced thickly
1 x Red Onion - sliced thinly
2 tbsp Olive Oil
¼ cup Yellow Strega Liqueur
½ cup Sweet Semillon Vinegar
Dragons Relish
1 Tbsp Hoi Sin Sauce
1 tsp Garlic
1 tsp Ginger

Method:

Caramalise the red onion in olive oil in a frying pan with a lid. Add Dragons Relish, Hoi Sin, garlic & ginger, fry lightly. Add Sweet Semillon Vinegar and Yellow Strega and bring to simmer. Add sliced Corned Beef into mixture and put on lid. Simmer until warmed through. Take out Corned Beef and put aside on warm plate in warm oven. Reduce liquid, until it is a thickened sauce.

Serve with mash and the sauce poured over the top.

Note: Any leftovers, serve to James - he will love you for it!
