Finally our new website has all the bits working as we had planned. The shopping cart is fully operational and our freight component has now been added. Yay! Thank you for your patience all those who have been trying to buy online. You can now do so with confidence.

Hi Everyone,
Welcome to the December, 2008 Edition of our Castle Glen Herald Newsletter!
This year's Semillon will be sweet and plump. We are planning to make a sweet white with this versatile grape. We are asked many times for a sweet white wine, so many of our loyal customers should be very pleased.
Chardonnay is being its usual temperamental self. Although this is a difficult grape to grow it is worth it with the fabulous wine that can be made from this grape variety. Although it is currently not as popular with the general public, we believe it is one of those grape varieties that will stand the test of time. It makes beautiful wine and sparkling wine in the right hands. Our Chardonnay is used to make our traditional champenoise.
We are now bottling our 1999 Merlot. Yes you read right, 9 years old! Aged in American Oak for 9 Years it is mellow and smooth.
We have just tried our 2008 Chardonnay which has been maturing in American Oak, medium toast barrels. We put down 4 barrels and will be bottling one of these in the next couple of weeks. It has great colour and is developing richness. It will be a while until we achieve a rich, buttery Chardonnay - probably a couple of years. We are keeping at least two of the barrels to allow these to develop their own colour and richness. Yum! I cant wait for these.
Remember all of our wines are preservative free!

Dessert of the Month
Quick Mix Steamed Christmas Pudding with Queensland Delight or Whiskello
Ingredients:
1 ½ cups (240gm) sultanas
1 ½ cups (225gm) currants
1 ½ cups (250gm) raisins
¾ cup (125gm) mixed peel
2 ¼ cups (450gm) firmly packed brown sugar
1 tablespoon grated lemon rind
¼ cup (60ml) Queensland Delight Liqueur - Rum Coffee & Choc or Whiskello Liqueur
3 eggs, lightly beaten
½ cup (75g) plain flour
1 tablespoon mixed spice
4 cups (280gm) stale breadcrumbs
185gm butter
Extra Queensland Delight Liqueur or Whiskello Liqueur, to pour over cooked pudding.
Combine all ingredients in a large bowl and mix well.
Method to Steam Pudding:
1. Grease 2.25 litre (9 cup) pudding steamer. Line base with baking paper.
2. Spoon mixture into prepared steamer.
3. Place a 30cm x 40cm sheet of foil on bench, top with a sheet of baking paper.
4. Fold a 5 cm pleat crossways through centre of both sheets.
5. Place paper sheets, baking paper side down over steamer, secure firmly with string or a lid.
6. Crush surplus foil and baking paper firmly around rim to help form a good seal.
7. Place pudding in a large boiler with enough boiling water to come halfway up the side of the steamer.
8. Cover boiler with a tightly-fitting lid.
9. Boil 6 hours. Replenish with boiling water as necessary.
10. Pour extra Queenland Delight or Whiskello over pudding when cooked.
11. Stand pudding for 15 minutes before turning out.
12. Serve with Maidens Dream Whip.
Quick and tasty Christmas Pudding, perfect for that special Chrismas Day lunch or dinner!
Sauce of the Month
Maiden's Dream Whip
Ingredients:
125gm butter, softened
½ cup (80gm) icing sugar mixture
2 tablespoons Maidens Dream Liqueur - Baileys Irish Cream Style
Method:
1. Beat butter with electric mixer until light and fluffy.
2. Gradually add sifted icing sugar mixture.
3. Beat well until smooth.
4. Add Maidens Dream Liqueur, beat until combined.
5. Serve over Steamed Christmas pudding with Queensland Delight or Whiskello.
Irish Cream Style Sauce, fantastic for using over your Christmas pudding or your favourite hot dessert!
Meal of the Month
Prawns and Calamari in Dragons Chilli Relish and Coconut Creme
Ingredients:
½ Kg of Green Prawns
1 Calamari Tube, cut into thin rings
1 Brown Onion, chopped
Oil, for frying onion
½ Cup Coconut Creme Liqueur
1/8 Cup Sweet Semillon Vinegar
1 Tbsp Dragons Relish
Method:
1. Fry onion in oil, in medium size frying pan, until soft and golden.
2. Toss in Prawns and Calamari and add 1 Tbsp Dragons Relish - or to taste.
3. Add 1/2 Cup Coconut Creme Liqueur and 1 tbsp Sweet Semillon Vinegar.
4. Cover and simmer until prawns and calamari are cooked (approx 5 mins).
5. Reduce heat, take off lid, reduce sauce until thickened and serve on rice.
Optional: Add 1tsp Garlic and/or 1 tbsp Ginger
Fantastic Summer Seafood Recipe. Perfect for a Christmas Day treat!

Ingredients:
30ml Queensland Delight
Rum Coffee Chocolate Liqueur
15ml Maidens Dream Liqueur - Baileys Irish Cream Style
15ml Pecan Hazelnut Liqueur - Frangelico Style
15ml Dark Chocolate Liqueur
15ml White Chocolate Crème
Ice
Put all ingredients in a cocktail shaker half filled with ice cubes. Shake and strain into a Martini glass and serve.

Shooter of the Month
Fruit Tingle
Ingredients:
10ml Coconut Liqueur - Malibu Style
10ml Go Troppo Liqueur - Pineapple and Tropical Fruit
10ml Lemon & Lime Liqueur - Daiquiri Style
10ml Blue Lagoon - Blue Curacao Style
Pour each liqueur in order into your shooter glass. To get the layered effect, pour the 2nd, 3rd and 4th Liqueur into the centre of the first liqueur very carefully.
Tingly, tropical delight!
