'Just a Few Words'
Hi Everyone,

Welcome to the September, 2008 Edition of our Castle Glen Herald Newsletter!

We have just finished pruning all our grape vines in readiness for Spring and our expected bumper crop. It certainly was a chilly winter with temperatures reaching down to -10 degrees on some nights and regularly below 10 degrees in the day inside the Cellar Door. Just remember that a nice cold winter almost always precedes a bumper crop. We are looking forward to harvesting around 55 tonnes of grapes next year.

Our babies are growing well! Our new avenue planted trees are enjoying all the rain that we have had here at Castle Glen.

Spring brings warm weather which means manufacturing time. We will be busy making fabulous New products and our favourites of course!

The first of the season will be finishing the beer and it will be ready for release next week. Strawberries will be ready soon, so we will be manufacturing our Strawberry Liqueur and Strawberry Champagne ready for Xmas drinking!

Our New Glass from Italy has arrived in the country. The fantastic new Castle Glen Bottle with our custom shape and design will be available soon! New shapes and sizes will also be available.

Castle Glen goes to the Hunter Valley! This month will are releasing a range of our best selling Liqueurs, along with Wines, Fortified Wines and Sparkling Wines in the Hunter Valley, NSW. Our Late Pick Red and particularly our 2002 Cuvee Style Sparkling Wine with 24kt Gold were the favourite tasters for the folk who tried them.

Castle Glen goes to the Olympics! Our 2002 Chardonnay/Semillon Sparkling Wine with 24kt Gold was sold in Beijing for the Olympics. Gold Medal spirit!

Pork Chops with Port Sauce
Some recipes are good and some are fantastic
- this one is a real plate licker!

Ingredients:

2 Pork Chops - THICK
1 tbsp Olive Oil - for frying pork
1 tbsp Butter - for frying pork
1 Red Onion - sliced

Sauce:

¼ cup Aussie Sling - Liqueur Fortified Wine
¼ cup Coconut Crème Liqueur
1 tsp ginger
1 tsp honey
1 tsp mixed herbs
¼ cup Sweet Semillon Vinegar
2 tbsp Ketcup Manis (sweet soy sauce)
½ cup thickened cream

Method:

Preheat Oven to 180°C

Melt Olive Oil and Butter in a heavy cast iron frying pan and heat to very hot and fry Pork on one side until lightly brown, turn and fry on other side until lightly brown both sides - place pork chops in frying pan directly into the oven. Cook for approximately 15 minutes - time depends on the thickness of the chops. Take out of frying pan and rest (keep warm).

Sauté sliced Red Onion in Olive Oil until caramalised and set aside.

Make Sauce in heavy cast iron frying pan used for Pork Chops, by combining Aussie Sling, Coconut Crème Liqueur, mixed herbs, Sweet Semillon Vinegar, and Ketchup Manis. Bring to slow boil in frying pan and cook and reduce. Once thickened, stir in cream and continue to boil until sauce is covered with large shiny bubbles - about 3-5 minutes. Add sautéed red onion to the sauce and mix in gently.

Serve by placing Pork Chops on the plate and spooning over the sauce. Serve with steamed vegetables such as zuchinni, broccoli, sweetcorn and/or cauliflower.

Ingredients:

Lemoncello Crème Liqueur
Grappa
Ice

Mix equal amounts of Lemoncello Crème Liqueur and Grappa (50/50 blend). Serve poured over ice. Yum!

Castle Glen @ Southbank in August

It was great to see so many of our valued customers at Southbank enjoying a wonderful summer Sunday and trying new products. It was fantastic to meet new people who tried some of our most popular products. Heaps of folks bought Castle Glen Liqueurs and Castle Glen Fudges. Our Dark Chocolate Port was such a hit it sold out in 3 hours! Thank you to all of you who came and supported Castle Glen Liqueurs. It certainly was a wonderful market day.
