| News From the Vineyard |

The vineyard is going well and large crops are expected in most of our varieties. There has been unusually warm, humid weather in Stanthorpe, with a very active storm season. We have even had those lovely ice marbles falling from the sky (otherwise known as hail). Some of our vines got a battering, but most of our sweet fruit is still intact, giving us great expectations for our harvest time.
The Cabernet Sauvignon vines are looking great. We can look forward to making another Late Pick Cab-Sav, fantastic news for our Cabernet Sauvignon customers. This delightful wine was such a hit with our customers this year that we totally sold out. We are expecting a good crop from the usually temperamental Chardonnay vines. We are looking forward to putting down a couple of barrels to mature, creating a sweet Chardonnay wine and a beautiful Chardonnay port.
A bumper crop is expected for our Semillon grapes. Although the weather has been dry we are irrigating to keep the crop developing. Our Semillon grapes make many of our unique white wines and fortified wine products, such as Dark Chocolate Fortified Wine, Ginger White Fortified Wine and the Sex Range.
We have lots of birds at Castle Glen at the moment, of the feathered variety of course. They have been feasting on our White Muscat grapes. As this has happened before we are looking at netting the grapes next year. We really wanted to produce more White Muscat fortified wine aged in a Bourbon Barrel as it has been extremely popular. Stocks are running low and it certainly takes time to produce such a beautiful fortified wine. Early ripening of our red wine grapes, particularly the Merlot is early this year. This creates some fabulous sugars that are so tasty and tempting to the visiting birds. Let's keep our fingers crossed and hope that they leave lots of lovely grapes for all of us!

Christmas and New Year was an exciting time at the Castle Glen Cellar Door. Our fabulous Greg was very busy looking after the Cellar Door over the Christmas period and right into a busy New Year. Thank you to all of you who visited us over the festive season.
The Castle Glen Shopping Cart is proving to be a hit with those who have taken the plunge. We have been receiving orders from the USA, UK and Canada as a result of our fantastic new website. The world is truly coming to Castle Glen. Lots of effort has gone into creating our new website and launching Castle Glen's many products to the internet market. During 2009 it is our mission - Carol-Anne's in fact - to have all of Castle Glen's fantastic range of 450+ products on the site. We want to give our valued customers the opportunity to purchase all of our products online.
The Castle Glen Christmas Cake (which turned into Christmas Pudding) made with our Liqueur Cab-Shiraz Fortified Wine, 18 YO Brandy and Whiskello served with 18 YO Brandy custard was such a hit this year the orders are already in from the family for next year. Our valued customers also have enjoyed Christmas Cake with a difference - see testimonial below.

We are creating so many fantastic new recipes at Castle Glen. We have new recipes for our Essential Bar Packs, Best Seller Packs and Cooking Packs. We want to show you all the great ways to use Castle Glen Products. If you have any of your own recipes with Castle Glen products we would love for you to share them with us.

Scallops in Mandarin
Ingredients:
½ kg scallops (roe still attached)
6 x Bacon strips - 40ml wide - cut in half (enough to wrap around scallop)
Plain Flour
½ cup Mandarin Liqueur
½ cup Ginger Liqueur
½ cup Coconut Creme Liqueur
1/8 cup Fruit Wine Vinegar
¼ Cup Olive Oil
Toothpicks
Method:
1. Dust scallops in flour
2. Wrap scallops in bacon and secure with toothpicks
3. Fry in ½ cup Olive Oil, ¼ cup Mandarin and ¼ cup Ginger Liqueur
4. Lightly fry scallops wrapped in bacon - both sides in batches
5. Put into preheated oven 180 degrees and finish cooking through
6. Add ¼ cup Mandarin, ¼ cup Ginger, ¼ cup Coconut Creme Liqueur and Fruit Wine Vinegar , cook on medium heat and reduce to creamy sauce.
7. Serve scallops with sauce on individual plates with a green salad.
Salad:
Lettuce (mixed leaves)
Cherry Tomatoes
Olives (black and green)
Capsicum - red
Baby Zucchini
Avocados
Dressing:
½ cup Olive Oil (good quality)
½ cup White Semillon Vinegar
4 cloves Garlic
Salt/Pepper to taste
Clean lettuce, cherry tomatoes, capsicum and baby zucchini. Tear lettuce, cut up capsicum and zucchini in to strips. Arrange in salad bowl with avocado cut into pieces.
Make dressing putting Olive Oil, Vinegar and cut up garlic cloves into cup. Grind salt and pepper to taste.
Pour over salad when ready to serve.
Tip: Don't pour dressing over salad too early as the lettuce will cook in the vinegar.
