Have A White Winter With Our White Chocolate Liqueur
Smooth & Creamy, A Real Winter Warmer

White Chocolate Creme Liqueur is made with real white chocolate. It contains no dairy, no fat or eggs. You can sit it on the bar, opened, for up to 5 years.

This versatile liqueur was first created two years ago when a lady customer came into the Cellar Door and asked if Cedric would make an alcoholic White Freddo Frog. Well straight off to brewing and blending Cedric went. For the final taste test Cedric couldn't get hold of a White Freddo Frog, so he tasted a Milkybar instead. So Castle Glen's White Chocolate Liqueur is really like an alcoholic Milky bar. When you try some, see if you can taste the 'Milkybar' flavour.

There are so many creations to be made with White Chocolate Liqueur. Many Cocktail Experts around town love to use our White Chocolate Liqueur to create amazing cocktails and drinks. Lots of different High-Strength Liqueurs are smoothed and sweetened by the addition of White Chocolate Liqueur. Many of our fabulous liqueurs like Jelly Bean, Musk Stick, Black Knight, Knights Delight, Orange, Yellow Strega, Cherry Brandy, Orange Brandy, Amore Liqueurs, just to mention a few, go down very nicely with a bit of White Chocolate Liqueur added.

I would go so far as to say that White Chocolate Liqueur is an essential addition to any well stocked bar. It truly is very versatile, and wonderful to drink.

Can Wine Actually Make You Sick?

How can wine be good for you if it causes asthma, nausea, headaches, heart palpitations, allergies, skin rashes, a dry mouth, dehydration and hangovers? And this isn't even when you drink too much. This can be from just a small amount, not even a glass. What is causing these reactions?

A growing number of people are intolerant or allergic to preservatives, which are commonly found in food and liquor. The widely used preservative in wine is sulphur dioxide (220,223,224). People's tolerance of sulphur dioxide varies widely.

Sulphur dioxide is like bee venom and many other irritants, your susceptibility increases with continued exposure. As you get older you'll increasingly notice the effects of sulphur dioxide. It might be just be waking up in the middle of the night with a very itchy nose rather than asthmatic tightness, a cough or a headache. These symptoms send the message that although you may not be sensitive to sulphites at this moment, you may become so in the future.

Many consumers are under the mistaken impression that a wine that does not contain 'preservative' is destined for a short shelf life. The presence of sulphur dioxide will not protect wine against the growth of the bacteria that produces vinegar or from wild yeast. All the vinegar-producing bacteria need is a little air and they happily go to work.

Sulphur Dioxide is used most often winemaking to knock back bacteria and wild yeast prior to fermentation. There are other ways to solve this problem. One is to harvest by hand so that the fruit does not get a chance to generate unwanted organisms.

All of Castle Glen Vineyards grapes are hand-picked and treated with loving care so that the use of Sulphur or any other preservatives are not necessary. There are some other vineyards in Australia that produce small amounts of Preservative Free Wine, but definitely not in the same quantities as Castle Glen. We can proudly say we are one of the largest, if not the largest producer of Preservative Free Wines, Suphur Free Wines in Australia.

Can we say that a glass or 2 Castle Glen Wine is good for you? Absolutely!

Drink Healthy, Drink Castle Glen Wine Today!

White Chocolate Creme Mudcake
A wonderful white chocolate cake. It is best to make the cake a couple of days in advance as the flavour and texture improves. Store in the fridge, but it is best to bring to room temperature before serving. Just divine!

Ingredients:

300gm Real White Chocolate (like Nestle Milkybar)
200g Butter
½ cup milk
½ cup White Chocolate Creme Liqueur
2 teaspoons (10ml) Butterscotch Liqueur
2 large eggs, lightly beaten (use eggs with a minimum weight of 59g)
100gr (2/3 cup) Self-Raising Flour
150gr (1 cup) Plain Flour

Method:

1. Preheat oven to 160 degrees Celsius (145 degrees Celsius fan-forced oven)
2. Grease a 20cm square cake pan (round is also fine) and line the base and sides of the pan with baking paper - or use a spring form pan - grease with butter or oil.
3. Melt butter and sugar in a large saucepan over a low heat, stirring occasionally. Add white chocolate and stir until melted. Add White Chocolate Creme Liqueur , a small amount at a time, stir until combined. Allow mixture to cool at room temperature for 15 minutes.
4. Add Butterscotch and lightly beaten eggs to chocolate mixture and stir until well combined.
5. Sift flours together in a large bowl. Add one cup of chocolate mixture to the flour and stir until a smooth past forms.
6. Repeat with another cup of the chocolate mixture.
7. Add remaining chocolate mixture and stir until mixture is smooth. This gradual method of combining the wet and dry ingredients helps prevent lumps.
8. Pour mixture into prepared pan.
9. Bake for about 1 hour 10 minutes. When the cake is ready, a fine-bladed knife inserted into the centre of the cake should come out without any batter attached.
10. Loosely cover cake with a greaseproof paper or a clean tea towel and allow it to cool to room temperature in the pan.
11. The cooled cake can be iced with the white chocolate ganache immediately (see directions below) or stored and then iced on the day of serving.
12. Store in an airtight container in the refrigerator and bring to room temperature before serving.
13. Enjoy!

Sour Cream and White Chocolate Creme Ganache

Ingredients:

150gm Real White Chocolate(like Nestle Milkybar)
50ml White Chocolate Creme Liqueur
200ml Sour Cream (Thickened)

Method:

1. Melt white chocolate in a small saucepan over a very low heat, stirring occasionally.
2. When chocolate has completely melted add White Chocolate Creme Liqueur and stir to combine.
3. Remove from heat and quickly stir in sour cream.
4. Use immediately, or if your ganache is quite runny, set it aside in the fridge to thicken slightly before using.

Caster Sugar, for frosting your cocktail glass

1. First, chill your cocktail glass.

2. Frost the edge of your glass in a saucer of caster sugar.

3. Shake the White Chocolate Liqueur, Butterscotch Liqueur, Peppermint Liqueur, Pure Cream and Crushed Ice in your snazzy little cocktail shaker.

4. Strain it through into your beautifully prepared glass.
