Mango Liqueur

There is more than just a little bit of Mango Madness at Castle Glen this Summer.

At Castle Glen we use only the best tree ripened fruit to make our Fruit Liqueurs. Mango Liqueur is no exception. Mango season is in full swing and recently we received a shipment of fantastic tree-ripened mangoes from Mareeba carefully freighted down from Northern Queensland. Special care was taken to minimize their time in cool rooms. This ensures the natural sugars in the fruit remain to make our fabulous Mango Liqueur. Using tree ripened and vine ripened fruit is absolutely essential to make the best quality, most flavoursome Liqueur.

The process we use at Castle Glen ensures all the wonderful benefits of fresh fruit still remain in the Liqueur. The mango is blessed with many benefits. They contain an enzyme similar to papain in papayas, a soothing digestive aid. Studies have shown that foods containing phenolic compounds have powerful antioxidant, anticancer, and anticardiovascular abilities. The mango contains 6 different phenols, truly a wonder of nature. In India mangoes are used as blood builders because of their high iron content. People who suffer from muscle cramps, stress, and heart problems can benefit from the high potassium and magnesium content that also helps those with acidosis. In lab tests mango juice has even been found to destroy viruses.

The mango is a very popular fruit worldwide. Mangos have been carefully cultivated and many of the wonderful varieties available today are the result of many years of passion and hard work by serious mango lovers. Mangos are in fact the 3rd largest food crop in the world today, with India being the largest producer. Over many centuries mangos have been described as the "Apple of the Tropics", the "King of Fruits" and "Fruit of the Gods".

This year we processed one tonne of mangos (we hand peeled the lot - see photo's) and we have made mango products for all the mango affecionadoes. Mango Jam is made from the bi-product of Mango Liqueur production. It is the reverse of Vegemite - we use the mango pulp off the top of the fermentation tanks and turn it into Mango Jam. Liqueur News
The Rich Red old style plum liqueur is now in the cold room being readied for bottling. Of course the Plum Jam is on the shelf and is bursting ready for your toast now!

Lychees are in the tanks fermenting for Lychee Liqueur. These wonderful organically grown Lychees are definitely full of flavor. Beautiful fruit makes beautiful Liqueurs. We are sure that this season's wonderful fruit will ensure our new Lychee liqueur is a winner. (And if we may say - better than last years!)

News From Castle Glen Vineyard

2010 Vintage is now in full swing with picking already started. It certainly is very early this for this year's vintage.

Our Chardonnay is so fantastic that the birds thought so too! Cedric believes this is the best Chardonnay he has ever seen off the vineyard at Castle Glen . The birds aren't so keen on the Semillon. This fruit is not as sweet and has more leaf coverage, making it harder for the birds to try and pluck them off the bunch.We are hoping to make an Unwooded Chardonnay and our famous Pink Chardonnay - The Wicked Witch for all those Chardonnay lovers out there. All our precious white wine grapes are now off the vines and in the tanks doing their thing.

The Cabernet Sauvignon grapes from the top block are looking just great. We are looking forward to picking these fruit in the next week.

No new wines will be released this month

Summer Cellars:

Pink Chardonnay, the second bottling of this summer favourite is selling fast and is a definite hit for Valentines Day. Get into the Cellar Door, Montville or our new soon to open Mt Tamborine store to secure a bottle or two. This wonderful wine is light and fruity, great with a salad or seafood. At only $16.00 Cellar Door, Montville & Mt Tamborine $20.00 Castle Glen Pink Chardonnay is a great buy.

Mango Omelette with Mango Liqueur Drizzle
Ingredients:

4 eggs
2 tbsp. whipping cream
1 tbsp. sugar
3 tbsp. butter
2 large mangos, cut in chunks
½ tsp. salt
Mango Liqueur to drizzle over the top when cooked and served

Method:

1. Beat eggs, cream, sugar and salt lightly in medium-sized bowl.

2. Melt butter in an omelet fry pan or small fry pan over medium high heat, tilting pan to coat bottom and sides.

3. Pour egg mixture into pan.

4. Cook, lifting edges of set mixture to allow uncooked egg to flow to bottom of pan.

5. Continue to cook until omelet is set, but top is slightly moist.

6. Layer mango over top of omelet and cook 30 seconds.

7. Fold like an envelope and slide onto serving platter.

8. Drizzle Mango Liqueur over the top and serve.

A twist on the Mango Omelette.

Method:

1. Cook the Mango (cut into chunks) in a small pan with a little water and 2 tbsps of Mango Liqueur until warm and the liquid reduced to a syrup - keep warm whilst making omelet.

2. Ladle out Mango fruit onto omelet, fold like an envelope and slide onto serving platter

3. Drizzle over the warm Mango Syrup!

YUM!! A great Sunday morning brunch.
Serve with Castle Glen Sparkling Wine (Cuvee or Brut - Method Champenoise) for a decadent Champagne Brunch. Available at the Cellar Door and Montville.

30ml Mango Liqueur
30ml Royal Chocolate Jaffa Liqueur
30ml Banana Creme Liqueur.
Scoop of Ice Cream
Crushed or Shaved Ice

1. Place all ingredients into a blender.

2. Blend for about 1 minute.

3. Serve in your favourite Martini Glasses.

4. Garnish with some Mango or your favourite decorations.

A tropical smoothie with a difference!

Tropicale Spider

Pour into a couple of long glasses, top with Lemonade.

Enjoy the sweet summer Mango taste!
