Castle Glen Pizza Print E-mail

Ingredients

2 x Pizza Bases - use large size Lebanese Bread if preferred
Roll of Cabonosi or Pepperoni Salami (mild, medium or hot - your choice)
Dragon's Relish - Castle Glen Relish
Chopped Garlic
Chopped Mushrooms
Sliced Capsicum
Olives - Green and/or black (Tuscan mix is good)
Anchovies
Capers
Large Boccocini Cheese - sliced

Method

1. Spread Dragon Relish on to Lebanese Bread or pizza base
2. Put on Cabonosi or Pepperoni, sliced, chopped Garlic, chopped Mushrooms,
3. Olives - cut in half, Anchovies - to your liking and capers
4. Slice Bocconcini Cheese and put on pizza
5. Place Pizza on metal tray and cook in oven at 200°C or 180°C Fan Forced Oven for approximately 15 minutes or until cheese is melted and turning light golden brown.

For Vegetarian Pizza, add vegetables like mushrooms, capsicum, semi-dried tomatoes, semi-fried eggplant, capers, anchovies and olives with Boccocini Cheese.

Chef's Note: We find the Boccocini Cheese a great replacement for Mozarella Cheese which can be fatty.

Taste the gourmet sweet spicy flavour! Serve with 2008 Wooded Chardonnay or 2008 Pink Chardonnay.
