Corned Beef Leftovers Print E-mail

Ingredients

Left Over Corned Beef - sliced thickly
1 x Red Onion - sliced thinly
2 tbsp Olive Oil
1/4 cup Yellow Strega Liqueur
1/2 cup Sweet Semillon Vinegar
Dragons Relish
1 Tbsp Hoi Sin Sauce
1 tsp Garlic
1 tsp Ginger

Method

Caramalise the red onion in olive oil in a frying pan with a lid. Add Dragons Relish, Hoi Sin, garlic & ginger, fry lightly. Add Sweet Semillon Vinegar and Yellow Strega and bring to simmer. Add sliced Corned Beef into mixture and put on lid. Simmer until warmed through. Take out Corned Beef and put aside on warm plate in warm oven. Reduce liquid, until it is a thickened sauce.

Serve with mash and the sauce poured over the top.

Note: Any leftovers, serve to James - he will love you for it!
