OORAY Fermented Plum Liqueur
Castle Glen's Ooray Plum Liqueur is perhaps the first true product to originate from the endangered variety of Native Plum, "Davidsonia Jerseyana" (the Davidson Plum). This endangered Indigenous Australian fruit is sourced only from organic, sustainable growing resources with plantings increasing each year. The beautiful crimson-magenta hues of this Liqueur can be truly appreciated through the clear flint chili bottle. Above best practice standards are used to produce this chemical and preservative-free product which is extremely high in antioxidants. The plum is also much revered all over Asia for its wonderful digestion-aiding qualities. Castle Glen Ooray Plum Liqueur has taken this native endangered fruit from 'Bush Tucker' to a World Class Liqueur.

The Castle Glen Ooray Plum Liqueur was produced in collaboration with Sunshine Coast based AuraGold Farms who sourced quantities of the endangered variety of the Ooray Plum from a secluded area of northern New South Wales. All fruit has come from recently established plantations or wild harvested under appropriate management conditions.

This naturally fermented Plum Liqueur contains only 100% skin-on and whole seed Davidsonia Jerseyana Plum. This is the first time that this variety of plum has been used to make an amazingly coloured, 20% alc strength liqueur.

The Ooray Plum has been tested to reveal very high levels of the red antioxidant anthocyanin, which is known to assist in the production of hydrogen which in turn supports cellular health and aids the immune system. A Rural Industries and Development Corporation report into the Ooray fruit also found the plum contains high levels of Lutein, Vitamin E and Folate, Zn, Mg, Ca, Mo, and a high Potassium : Sodium ratio.

Plums used to produce this liqueur were tested and shown to contain 82.2 mg of anthocyanins per gram - which was described by the testing scientst as "extraordinary". In short, the Ooray Plum holds great promise and potential as what is described as a 'functional food' line. A safe way to support the digestive process is to drink a small 10ml glass of liqueur following meals.

As with all Castle Glen products, the highest standards are required in the creation of a chemical-free, preservative-free product such as this. The Ooray Plum Liqueur has been 100% fermented in a stainless steel tank. Midway through fermentation, removal of the seeds took place, letting the skins and pulp ferment to its full colour and flavour. After fermentation, the liqueur is chill filtered and fortified for final preservation as a liqueur.

The complete process for the Ooray Plum Liqueur has been overseen by Castle Glen Australia. From receiving the Ooray Plum at our manufacturing premises, through fermentation, bottling and final shipment to the end user.

The bottle shape and label design were chosen to clearly allow the liqueur's natural colours to be appreciated. When sunlight shines through the bottle, the crimson-magenta hues can only be described as "out of this world".
